  • 100 grams macadamia nuts
  • 2 tablespoons roughly chopped flat leaf parsley
  • 1 tablespoons roughly chopped mint leaves
  • 100 grams grated parmesan cheese
  • 1 cup fresh breadcrumbs
  • 1 clove garlic, finely chopped
  • 1 teaspoon sea salt
  • 1 teaspoon freshly ground pepper
  • zest and juice of 1 lemon
  • 2 teaspoons macadamia oil
  • 8 lamb cutlets
  • To make the macadamia crust combine all the crust ingredients in a food processor and process into a rough paste. Press the paste onto the top of the lamb cutlets.
  • Preheat Hotplate for 8 to 10 min. add oil , lower heat setting before placing lamb cutlets on the barbie and cook as desired.
  • Remove from the heat and loosely cover with tin foil and allow to rest for approximately 2 minutes before serving.
