- 100 grams macadamia nuts
- 2 tablespoons roughly chopped flat leaf parsley
- 1 tablespoons roughly chopped mint leaves
- 100 grams grated parmesan cheese
- 1 cup fresh breadcrumbs
- 1 clove garlic, finely chopped
- 1 teaspoon sea salt
- 1 teaspoon freshly ground pepper
- zest and juice of 1 lemon
- 2 teaspoons macadamia oil
- 8 lamb cutlets
- To make the macadamia crust combine all the crust ingredients in a food processor and process into a rough paste. Press the paste onto the top of the lamb cutlets.
- Preheat Hotplate for 8 to 10 min. add oil , lower heat setting before placing lamb cutlets on the barbie and cook as desired.
- Remove from the heat and loosely cover with tin foil and allow to rest for approximately 2 minutes before serving.
